Posted By: EmmaThis is the first knife I\'ve bought as a professional, and I love it (so does everyone else in the kitchen). It sharpens up well and holds its edge. I mainly use it on vegetable prep, but it\'s extremely versatile, I use it for everything. In a pinch it can even handle cutting through a crusty baguette or carving meat. Unfortunately it got a big nick in the butt of the blade the first day I had it (not while in use, at least to the best of my knowledge - I left it in a fishtub overnight and came back to find a big piece missing), but otherwise it has proved to be durable and the nick does not impact utility.
