When processing vegetables, the quality of the edge a knife can take is paramount to high performance. This Teruyasu Fujiwara Nashiji 165mm nakiri is lauded for the extraordinarily acute bevel geometries it can take and its ability to hold the most refined of edges. The fantastic edge taking properties are attributed to the use of the premier cutlery steel Shirogami #1 in the core and the core steelís incredible heat treatment. Fujiwara hardens the core of these knives to an astounding 64-65 HRC, well above the hardness of most knives using similar steels. The reactive core steel is wrapped in a low maintenance stainless steel cladding. The finish is an attractive, rustic pear skinned finish. The octagonal handle is well made using ho wood and a buffalo horn ferrule. These knives are pieces of functional art hand crafted by the Fujiwara family. As each knife is unique, dimensions may vary from those posted.

    Great knife. Fast shipping. I use this knife 5 days a week on the line in a professional kitchen. This thing rips through vegetables like a Ferrari around a racetrack. Just beautiful. Easy to sharpen on my Japanese water stones. Super super sharp. Fast shipping, I purchased the knife early on a Saturday morning, it was delivered the following Monday!

    Simply amazing. It's nice to have a carbon blade that is easy enough to clean in a fast paced kitchen. Slightly thicker then what I prefer for an 165 nakiri, however edge retention and ease of use helps me forgot about that.
