The FKH line from Fujiwara Kanefuse features a High Carbon series blade. These knives are more reactive so they require extra care to keep from oxidizing and rusting. It is advisable to force a patina on the blade to aid in its protection. The upside of this steel is that these blades take a steep edge and will hold it for an extended period.
This line of knives is primality intended for those wishing to move away from department store western blades and into the Japanese knife arena. It is all too easy to spend hundreds of dollars on these very different knives only to discover that you are not comfortable with the extra care and maintenance that is required. Or you just donít like their very different feel and characteristics. The FKH line makes this transition or experiment a much easier financial step to take.
This FKH series is equipped with nice black Pakka wood handles and the steel has a HRC rating of 60. They really are an extraordinary value at this price point.
The 120mm petty knife is the paring tool of the Japanese knife world. It is great for detail work like garnishes as well as for peeling and cutting vegetables.

I needed a petty knife in my kitchen for some of the more delicate work on the line and for prep (strawberries, deveining shrimp, etc). This knife just doesn't perform very well. It maintains it's spine thickness a lot of the length through, and doesn't thin out too much before the edge either. This leads to mediocre performance on the delicate work I want to use it for.
It's what you would expect a $40 knife so I shouldn't be disappointed. I would recommend the MAC 5" or 6" utility knife over this. Just drop a little more money and get a much better knife.
CKTG is at heart a small business so the service is personal. They are one of the rare companies that actually dispatch the order the same day as receiving it and provide tracking information. It is great to deal with an individual by name and itís evident that they take pride and love in what they do.
