The Teruyasu Fujiwara Nashiji line of knives has built a cachet among Japanese knife enthusiasts for their outstanding craftsmanship and high level of performance. For users on limited budgets or with modest cutlery needs, this 150mm petty is a handy and cost effective entry to this highly coveted line of knives. The heart of these knives is their high hardness Shirogami #1 carbon steel cutting edge. Hardened to 64-65 HRC, Shirogami #1 is capable of taking highly acute bevel angles and very highly refined edges. The reactive core steel is wrapped in a durable stainless steel cladding that eases maintenance. The namesake of the knife is its nashiji, or pear skin, finish. The octagonal handle is made of ho wood with buffalo horn ferrule. Each one of these knives is a unique piece of functional art so dimensional variations should be expected. A common complaint is the knives have a spine that shows the exposed white number 2 which is reactive so we get customers that are surprised when they see this middle core start to start to patina or rust. Take a look at the last photo that shows the spines of these knives. It's not a defect.

5  Getting to like this knife, March 26, 2015

I bought this knife for my wife but, at first she was a little intimidated but recently she has been using it every day and she loves it. I love it too if I can get a chance to use it. Excellent fit and finish and keeps a sharp edge unlike any other knife I've used.

Excellent Petty (or little Gyuto). These are really high Perfomance-knives. Very good shape, geometry and outstanding heat Treatment (I own many excellent knives and brands). Mine is about 160mm (edge) and 37mm high at the heal.

Other than the fast shipping and great service this knife was more than I expected it held an edge for 3 days and took very little time to sharpen although the hardness of the steel there was only minor chips after heavy usage a lot less than I expected has a nice tall heel on it I was able to slice things in the middle of my cutting board instead of on the edge its almost like a mini gyuto the best petty I have ever owned

The white #1 steel at this hardness takes it to a whole new world. This knife was CRAZY sharp OOTB and I can't even imagine what this knife will be like after it is taken to the stones for the first time. The F&F is excelllent.

The one thing you notice as soon as you see that fabulous Nashji finish and touch this knife, it has soul! You don't want to put it down! You want to cut up everything in sight! I cried when I had to put it up for the night.

If you are looking for that knife that is truly magical I recommend you try a Teruyasu-Fujiwara Nashiji. Absolutely the best value for a petty on the site.

Great utility knife. I use it for cutting fruits, garnishes, a small line knife, and for boning chickens. It is a workhorse, and highly recommend it to anyone looking for a fun little knife.
