The FKS series from Fujiwara Kanefusa is made from the same great stainless steel as the more popular FKM series, but comes with hollow edges on both sides of the blade. The Molybdenum/Vanadium stainless is known for taking a razor sharp edge and holding it for an exceptional length of time. This line is equipped with black Pakka wood handles and stainless steel bolsters to achieve exceptional balance. The steel has an HRC rating of 58-59. The hollow edges help to prevent food from sticking to the face of the blade. The 270mm Sujihiki is a great slicer. It can handle roasted birds or meats of almost any size, and makes slicing a breeze.
When I saw that I could pick up Fugimaras knives at that price I jumped all over it. His knives are amazing and this line is ridiculous value. Owning some of his extremely sharp when cared for properly carbon knives,I was looking for a slicer that could take a little abuse. The steel featured is very strong but takes a liitle time to sharpen,but can withstand light blowtourching etc.
