What many consider to be the best line of knives for an introduction to Japanese steel, the FKM series from Fujiwara Kanefusa is made from Molybdenum/Vanadium stainless steel. With an HRC rating of 58-59, this steel holds a razor sharp edge. Equipped with black Pakka wood handles and stainless steel bolsters, these knives are exceptionally well balanced. These knives provide unparalleled performance at this price point and are one our most recommended lines. The 120mm Petty knife is the paring knife of the Japanese knife world. It is great at detail work or peeling and cutting vegetables.
Great knife for the price. Extremely sharp right out of the box. It stays just as sharp if you run it down the steel two or three times before each use.
Great knife for the price, doubles as a short boning knife. Edge retention rather decent for a Moly steel
Very sharp knife. Great for slicing and a generally handy utility knife. However, the shape of the blade leaves too little room for your fingers between the handle and the cutting board. So it’s usefulness is a bit limited.
