If you are looking for a gateway into Japanese Kitchen cutlery, the Fujiwara line of stainless steel knives should be considered.

The FKM series from Fujiwara Kanefusa is made from Molybdenum/Vanadium stainless steel. With an HRC rating of 58-59, this steel holds a razor sharp edge. Stainless steel blades are slightly more time consuming to sharpen than their carbon steel counterparts but with itís slightly lower hardness rating the FKM is not a problem in this area. The 120mm Petty is a small knife suited for a multitude of cutting and parring tasks. Itís the perfect tool for chopping and slicing smaller items and a little gem when it comes to intricate garnish preparation. Watch out ripe tomato, youíve met your match! It will also suite smaller hands more than other larger knives. It is equipped with a nicely finished black Pakka wood handle and stainless steel bolster. With the light blade and handle combination these knives are exceptionally well balanced.

    Very sharp knife. Great for slicing and a generally handy utility knife. However,the shape of the blade leaves too little room for your fingers between the handle and the cutting board. So it’s usefulness is a bit limited.
