Superb boning knife. This knife comes with a nice factory edge that holds up well. Blade has a little flex as needed,but is not whippy like a long thin fillet knife. Handle is super grippy even when wet with water,fat,or blood.

This knife for the price cannot be beat. I decided since I work in a busy kitchen that while hacking away at chickens I did not have time to be gentle with the knife and worry about chipping the blade of a more expensive knife. Well I was surprised at how much I like this knife. I have a lot of Forschner knives for my house use now. Also my culinary instructors all use fibrox pairing knives since they are always beat on or lost/stolen.

This knife glides through fish and chicken. It has a fine edge and a good utilitarian grip. Most of my knives are Yoshikin Global,so this is a really good rating.

So far,the knife has been great! Very sharp,and the slight flex is great for taking a little meat with the skin off pieces of salmon,which we then fry,per sushi restaurants. It’s a lot better deal than a $90 German rigid knife I had,where the blade actually shattered into two pieces when I hit it on the wooden counter one day!
