We have a soft spot for the sword shape of a kiritsuke. There is something about it that screams sharp, purposeful and traditional, and this is quite simply one of the best Kiritsukes on the CKTG site.
The Keijiro Doi White Steel Kiritsuke measures 240mm on the blade. It is of fairly average thickness but of way above average build and finish. The lovely kasumi upper edge is embellished with some fine looking engraved kanji characters. Of course this is a traditional one sided bevel so it for righties only. Also this is a carbon steel blade, so it requires the care and attention to drying and maintenance that these blades demand. It will patina over time, but this will just add to the wonderful personality of the knife.
Keijiro Doi is a master blacksmith from the city of Sakai who makes traditional Japanese knives by hand forging. We are proud to offer these excellent quality knives by the 80 year old master. He forges his knives in a small blacksmith shop and distributes them to several companies in Sakai. We buy his knives through Sakai Takayuki, one of the finest knife companies in Sakai City.

    this knife is unbelievable in its cutting potential. I own Blazen, Misono, Keijiro Doi and hatori KD. So far this kiritsuke is the best bang for the buck. The color change from blue to yellow is a reaction from contact with different acids and protein, yellow from vegetables and blue from meats. This is a great example of pure forging and carbon quality. Get your hands on any Doi you can....He wont be among us for ever!!
    p.s his son only finishes his fathers blades.

    I bought this knife a short while back specifically for sashimi and recently had the perfect opportunity to put it to use. Itís amazing how smoothly effortlessly this knife cuts with an ďout of the boxĒ edge Ė simply draw it through the protein and let the weight of the blade do most of the work. Leaves me wondering just how much more wicked the edge can be made. I highly recommend this blade (a beautiful piece of art in its own right) and Chef Knives To Go.

    5 stars. Happy to have purchased this knife over other makers' kiritsukes- and there are some fine ones out there. Thick rounded spine with a long-lasting razor single bevel. I agree with the gentleman who submitted his review on this page- the patina is crazy. I'm getting this beautiful mottling- all colours. It looks like a museum piece. I recommend minding the tip of this blade carefully. It is extremely thin as ever at the final tape... out to 8mm. X-acto thin. I trust it is very strong, however. The handle is clearly handmade with an rough/ uneven D-shape...and it lends to the beauty of the design- accentuating the fact that this thing was made entirely by hand.

    First of all I would like to comment on the excellent service. I live in Hawaii and recieved my knife within four days with free shipping and they spent $50 on shipping insurance that was also at no charge. Shipping from the states to Hawaii in four days with free shipping is unheard of...I mean fast.I am definetly going to be a repeat customer! Ok now to the knife. I am a chef that cooks Japanese cuisine so this is not my first single edged knife. With that said I love this knife! For the price nothing can compare. Just beautiful I mean gorgeous and sharp out of the box. Wish it had more weight on the handle though. Other than that great buy easy knife to use and really well made. Happy with my purchase.
