Posted By: SJCThis knife has a really nice weight, allows a gentle/firm grip and the size is great for detail work and eviscerating food stuff. I transitioned from a 10\" Shun classic chef knife with a 48mm blade height so I worried that this grip (37mm) would be inadequate for long prep work but so far it\'s been very comfortable; so I am looking forward to using this as my all-around prep knife. Even so, if I had mounds of veg to process I\'d use a chinese cleaver anyway. Also, the blade design with the rough wood \"D\" handle makes for a very elegant but durable knife.
This is my third order from CKTG and my second Doi knife. CKTG continues to deliver on great selection and service. Doi knives... well, I\'ve drunk the kool-aid, and hope the son/apprentice (always two there are) will continue the legacy.
