Kiritsukes are one of the few multipurpose traditional Japanese knives, and they have the ability to be used as an usuba style vegetable knife or a fish slicer like a yanagi. These knives have a longer blade than an usuba and a straighter edge than a yanagi so they can bridge that gap between slicer and chopper. The overall look is sword shaped, which many people are fascinated by and attracted too. But the user needs to be quite experienced with traditional Japanese knives to properly utilize this unique style blade. In fact, tradition has it that these knives are only allowed to be used by the executive chef due to its difficulty in use.
Keijiro Doi forges this wonderful blade from Shirogami #2 steel hardened to about 61 Rockwell. It is clad in a soft steel. The finish he and his master craftsmen impart in this knife is of the highest standards. Care must be exercised in the cleaning and drying of this reactive steel. Also, as a single bevel grind this blade is reserved for right handed users.
A simple Yew wood handle and buffalo horn ferrule complete the package.
