This Keijiro Doi White Steel Kiritsuke measures 270mm on the blade. Keijiro Doi is a master blacksmith from the city of Sakai and makes traditional Japanese knives by hand forging. We are proud to offer these excellent quality knives by the 80 year old master. He forges his knives in a small blacksmith shop and distributes them to several companies in Sakai. We buy his knives through Sakai Takayuki.

Welcome to the big league boys,This knife is the real deal. A giant 270mm razor with a handle is a fitting description. There is some serious weight to this blade which has taken some getting used to,but is so worth it to wield a knife this sharp. I’ve been cooking(and cutting) for 20+ years and am a knife nerd. This knife is now the pride of my kit and I am very repectful(or maybe even fearful) of how sharp it really is. CKTG rules !!! I can’t wait to spend all my kid’s college money with you guys....
