Kiritsukes are one of the few multipurpose traditional Japanese knives, and they have the ability to be used as an usuba style vegetable knife or a fish slicer like a yanagi. These knives have a longer blade than an usuba and a straighter edge than a yanagi so they can bridge that gap between slicer and chopper. The overall look is sword shaped, which many people are fascinated by and attracted too. But the user needs to be quite experienced with traditional Japanese knives to properly utilize this unique style blade. In fact, tradition has it that these knives are only allowed to be used by the executive chef due to its difficulty in use.
Keijiro Doi forges this wonderful blade from Shirogami #2 steel hardened to about 61 Rockwell. It is clad in a soft steel. The finish he and his master craftsmen impart in this knife is of the highest standards. Care must be exercised in the cleaning and drying of this reactive steel. Also, as a single bevel grind this blade is reserved for right handed users.
A simple Yew wood handle and buffalo horn ferrule complete the package.
These are knives made by a true master blade smith in the time tested tradition of Sakai blade makers. The finish and level of craftsmanship is outstanding. You really should experience these knives.

    Welcome to the big league boys, This knife is the real deal. A giant 270mm razor with a handle is a fitting description. There is some serious weight to this blade which has taken some getting used to, but is so worth it to wield a knife this sharp. I've been cooking(and cutting) for 20+ years and am a knife nerd. This knife is now the pride of my kit and I am very repectful(or maybe even fearful) of how sharp it really is. CKTG rules !!! I can't wait to spend all my kid's college money with you guys....

Second, I want to say that these knives are all first rate quality and the craftsmanship behind these knives are top notch it takes true craftsman to make a knife of this quality! you have to just trust the fact that these are very nice knives and the pictures just don't do them justice!
