I can’t say enough good things about the Chosera stones. The Edge-Pro was very good out of the box,but with these stones it’s miraculous.
For knives that can’t hold a "mirror shine",this is the last stone I’ll use on them. I haven’t seen any point in going up to the 5k+ on softer steel. But on medium hard knives,using the 800 and 2k as a tune-up sharpening combo is almost ideal. And for the level of polish it puts on,the stone somehow manages to be hungry and work fast,I have no idea how.
