A very beautiful knife. Much more heft than I was expecting but nicely balanced. Feels solid - and the handle and finish are quite nice for a tojiro (seems the FandF are the main complaints about tojiro but this is not a concern here) My main complaint is that this knife is quite thick. I’m not sure if its because its handmade - but the blade is very thick as you move towards the spine and when chopping items that make contact with the upper portion of the blade (tomatoes, onions, etc) it does "wedge" the items. Its also a bit tough to sharpen - perhaps because its hard steel BUT I do have other aogami knives that seem infinitely easier to sharpen.
Overall, for $260 i’m not 100% satisfied due to the blade thickness, but I have a feeling this knife will last forever.
