The Bob Kramer Carbon collection by Zwilling J.A. Henckels. Bob Kramer and Zwilling have teamed up to produce this stunning line of knives that features great performance using 52100 steel. Bob Kramer is an ABS certified blacksmith and his custom knives have sold at auction for over $10,000 a piece and people wait over a year to get a custom knife made by Bob. Here is your chance to get a knife made to the specifications of Bob through a unique partnership with Henckels.
The Carbon collection features 52100 carbon steel that is heat treated to 61 Rockwell. The knives have fully rounded and mirror polished spine and choil with a fully tapered blade and tang. The knives are sharpened to 15 degrees on each side of the 50/50 edge and are sharpened with a traditional 3 step hand honed edge. The knife handle is made from Grenadille wood with brass rivets and custom mosaic pin.
I have not used this knife a lot (or sharpened it yet) but I can assure you that it is a replica as close as possible to the custom (real) Bob Kramer. It is more functional than the Shun Bob Kramer. Thinner and,in the end, better handle. Thinner blade, releived from the fake, easy to scratch, damascus of Shun Bob Kramer. If you like Bob Kramer’s work buy this knife, since 99,99 % of the funs of the Master(bladesmith),will not be able to buy the real deal. Lastly,if you are used in 8 inch blades, for this one buy the 10 inch due to the large belly of the knife.
