With a stunning aesthetic, this santoku from Mr. Katsushige Anryu's Hammered lineup will stand out in any Japanese knife enthusiast's collection. The renowned edge taking and edge holding of the Hitachi Aogami #2 core, coupled with Mr. Anryu's high performance grind, make this knife every bit the performer on the cutting board as well. As a hand-produced knife, individual examples of these knives may vary dimensionally from one another. While wrapped in stainless steel for ease of maintenance, the carbon core of the knife will discolor with normal use and could rust if abused.

    Balance is directly behind my index finger in a pinch grip, making for a slight handle heavy bias, and a blade that can change directions telekinetically. Out of the box sharpness on my copy was baby smooth arm shaving, can\'t tell I cut myself sharp.

    I have to say, if you are a home cook that maybe doesn\'t want to wade into the $225+ gyuto range, but want a J knife that looks almost as good as it performs don\'t bother continuing your search. Mine did paper thin hands free tomato slices out of the box.

    The fit and finish are great. The edge is super sharp out of the box. I love these knives, form and function. They look great and get crazy sharp. I also have the 75mm petty, 150mm petty, 165mm nakiri, 210mm gyuto, and 240mm gyuto.

    I purchased this knife as a gift for friend. I sharpened it and tested it out on a couple of onions and tomatoes. The knife is very light and nimble and showed good performance in the brief time I had it. Fit and finish were good and the handle is definitely way above average for a knife at this price.

    This is an excellent Santoku. The balance is perfect for a pinch grip, the handle is comfortable and the aesthetics are spot on. Blade performance is superb, every bit as sharp as Aogami blue super, but no where near as tedious to sharpen. An excellent knife at an excellent price.
